Vegeterian Stir Fry Rice Vermicelli

Even the dish is vegeterian, it is a vibrant and flavorful combination of rice vermicelli and veggie. You just can say no.
Ingredients
1 góirice vermicelli
Phu Huong Vermicelli For Party
400gcarrot
Da Lat Carrot
300gspinach
Da Lat Spinach
3 quảeggs

Fried Tofu

Preparation
  1. Soft boil spinach and rinse. Cut chives and tofu into bite size. Peel off carrot and cut into match sticks.
  2. Whisk eggs until evenly yellow and fry in a large pan into flat omelet. Leave aside awhile then cut cooked eggs into long strips.
  3. Boil water in a medium pot then remove from heat and add vermicelli. Soak the vermicelli for about 5 minutes then drain.
  4. Heat oil in a large pan then add leek or garlic and stir until golden and aromatic. Add tofu, carrot and spinach and stir fry for 3 minutes. Then stir in rice vermicelli and season with salt, sugar, pepper. Finally, add chives, bean sprouts and egg strings. Remove from heat.
  5. Prepare your dish and bonne apétit!
