Sturgeon curry is easy to make yet very delicious. The fish blends well with curry flavor, creamy coconut milk and basil to form a delicate dish. On a side note, unlike other regular fish, sturgeon has its unique taste, solid texture with a bit of fat, which makes it ideal for almost any kind of dishes such as stir-fry, hotpot, grilled.. +Shallots, Salt, Pepper, Chilli, Turmeric Powder (to your prefer)
  1. Step 1: Cut the sturgeon fillet into thin strips. Prepare the marinade with ½ pack of curry paste, a little bit of salt, pepper, minced shallots, turmeric powder (optional), mix it with fish strips. Leave for about 30 minutes.
  2. Step 2: Sprinkle pan with oil and fry the fish until fragrant and cooked through, add green peas. Then add the rest of curry paste, a cup of water, cook until boiled, then add coconut cream, a pinch of salt to taste.
  3. Notice: Sturgeon should have short cooking time about 15-20 mins depending on the size, try not to overcook it .
  4. Step 3: Add basil leaves and chili (optional) and turn off the heat.
  5. Step 4: Right before serving, add the fresh herbs. Serve hot with baguette.
  6. Tip: For Western style (using a plate) you can mash potato with a pinch of salt and milk. Serve with fish and curry sauce.
